When gardens produce fresh tomatoes at the same time of year and you have an overabundance, or you just couldn't resist a basketful of ruby red goodness at the market, try this dish. It's light. It makes your home smell wonderful. And it's good for you. Enjoy, |

You'll need:
In a large frying pan, heat the minced garlic in olive oil over medium heat for about 5 minutes. Add the chopped tomatoes, salt and pepper. Cook for fifteen minutes. Add basil and cook for five more minutes. Sauce will be thin and juicy. (You may peel the tomatoes and remove their seeds, but this will also remove extra vitamins and reduce the amount of sauce.) Serve over angel hair pasta in one large bowl or individual bowls. Pass the cheese. Makes four good size servings.
