You can cut the calories by using light mayonnaise or go for broke with the real thing in this recipe. Whichever way you choose, these stuffed cherry tomatoes are absolutely delicious. We just wish we knew who developed the original recipe so we could see if they ever came up with anything else this good. Enjoy, PS Nancy swears by the little pink spoons you get when you sample Baskin Robbins ice cream. She says they make wonderful cherry tomato stuffers. You could also use a baby spoon. |

You'll need:
Cut a very thin slice off each tomato. If you do this on the top, you can also remove any stem remains at the same time. Scoop out the pulp. Save it to add to a soup or stew or casserole. Drain the tomatoes upside down on a paper towel. Combine all the other ingredients. Spoon mixture into tomatoes. Keep refrigerated until serving. Place your serving platter on a bed of ice if possible.
