At least once a month I make soft chicken burritos for my family.  They are the first thing I ever made from scratch.  

The sauce simmers down for a couple of hours, then the chicken is added and it simmers for about another 30 minutes.  The secret is simmering the sauce.

Chicken Burritos

In large, deep skillet combine:

  • 3 cups water
  • 2 chicken bouillon cubes
  • 2 tablespoons cumin (this is the major flavor ingredient)
  • 1/2 cup fresh Italian parsley, if desired
  • 1 teaspoon chili powder
  • Dash of cayenne pepper
  • 1 cup chopped white onion
  • 1 fresh large tomato, chopped
  • 1/4 cup salsa
  • 1 stick butter
  • 1/2 cup sour cream
  • 1 to 2 cloves garlic, crushed with juice

Simmer on low for 2 hours with the lid off.  

Check the sauce occasionally to make sure there is enough liquid.  Add water if necessary.

Boil:

  • 4 to 5 pieces dark meat chicken (thighs are good) until the meat pulls away from the bones.  Do not use white meat.  It dries out.

After cooling the chicken, remove the skin and shred the meat. 

Add the shredded chicken to the sauce and let the whole thing simmer for at least another 30 minutes.  If necessary, add flour to thicken slightly after the flavors have had time to meld.

Serve with:

  • 8 flour tortillas
  • Goodies:
  • Chopped green onions
  • Green chilies
  • Chopped tomatoes
  • Shredded cheese
  • Sour cream
