This is my favorite basic recipe. It will take some elbow grease, but the result is well worth your effort. You'll need:
Add the yeast to warm water in a room temperature mixing bowl. Add the salt and oil, and gradually stir in all the flour. Knead by hand for several minutes. The dough will be sticky, but be careful not to add more flour or it will dry out. Place dough in greased bowl. Add a little oil to the top of dough to make sure it is coated on all sides. Cover with a tea towel and place in warm area to let it rise until doubled in size, about an hour. Punch the dough down, and divide it into two balls. Roll each ball out on a very lightly floured surface and form two loaves about 12 inches long. Place both loaves on a greased cookie sheet that has been dusted with cornmeal. Cover the loaves with the tea towel and let them rise until doubled, about an hour. Remove the towel, and carefully slice a line down the middle of each loaf, about ½ inch deep. Preheat oven to 425° F and bake the loaves for 20 to 25 minutes. While the bread is baking, beat the egg white and 1 tablespoon of cool water together. Paint the tops of the baked loaves, and bake them 3 to 5 more minutes or until golden.
