You’ll need:
Place potato quarters into bottom of slow cooker, making a layer at least 2" deep. Sprinkle with salt and pepper. Mash two garlic cloves in a garlic press. In a small bowl, mix mashed cloves with thyme leaves and chopped rosemary leaves from one sprig. Add the juice of one lemon half, olive oil and salt, and mix into paste. Wash and pat chicken dry.Loosen the skin on the breast. Place garlic/herb/lemon juice/olive oil mix under the skin. Insert the remaining garlic cloves, rosemary sprig, and lemon half into the chicken cavity. Place the prepared chicken in the slow cooker on top of potatoes, breast side up.
Cook on low for 8 hours. The leftover chicken can be put to all sorts of good uses, from sandwiches to casserole dishes. |
