Miss Ella, the matriarch of the Dunnigan family in my historic romance novel, The Goodbye Lie, is a good down home kind of cook.  Cornbread served with her husband Michael's ham and bean soup is just the ticket anytime a tummy needs filling.  She likes to bake hers in an iron skillet.  If you have one handy, try it!

read "The Goodbye Lie"

 

Buttermilk substitute:  Mix 1 tablespoon white vinegar to 1 cup milk.  Let sit for 5 minutes.

 

Skillet Cornbread

 

You'll need:

  • 1 cup of self-rising corn meal mix or 1 cup cornmeal plus 1 teaspoon baking soda
  • 3/4 cup buttermilk
  • 2 1/2 tablespoons vegetable oil
  • 2 eggs
  • 2 tablespoons honey
  • Jalapeño peppers, chopped (optional)
  • 1 small can of drained kernel corn (optional)
  • Non-stick cooking spray
  • 8 inch cast iron fry pan or 8 inch square or round baking dish
Preheat oven to 375˚ F.

Spray the baking dish with non-stick spray.

Mix all the ingredients. 

Pour into baking pan.

Bake uncovered for 18 to 20 minutes or until the cornbread is firm to the touch and a knife inserted in the center come out clean. 

Serve with jam or more honey.
