I love egg salad. I especially love it when it's still slightly warm from the freshly boiled eggs. On sandwiches, crackers, open faced with a tomato or on a bed of lettuce, it's wonderful for lunch, brunch, as an appetizer or a light meal with a soup. It's been around for quite a while and is served in my historic romance novel, The Goodbye Lie. Enjoy,

You'll need:
Shell and chop the eggs. Chop the onion or cut up the green onions with scissors. Stir in the mayonnaise and add salt and pepper. Just before serving, spread egg salad on bread. This will make 8 to 12 sandwiches depending upon how thickly you apply the egg salad to the bread. Cut into triangles to serve with as finger food. Garnish the platter with greenery or a flower. Refrigerate leftovers.
