You'll need:
Rinse fillets in water. Pat dry with paper towels. Dredge each fillet in flour. Add milk to eggs and whisk to mix. Dip the floured fillets in the egg mixture and then dredge in corn meal. Let dry about 20 minutes on fresh paper towels. Pour about 1/2 inch of oil in the bottom of a frying pan. This should not be deep enough to cover the fillets. Carefully heat the oil on medium so that when a drop of water is dripped onto the oil, it will "spit" back at you.
Fry the fillets uncovered in the oil, sprinkling garlic powder, salt and pepper on each side. Turn when each side is a golden brown. The complete cooking time will be less than 5 minutes. Fish is done if flakey when you cut into the thickest part. Remove cooked fish and place on fresh paper towels to absorb grease.
