Assemble:
Combine all the ingredients in large saucepan. Bring to a boil and then reduce heat to simmer. Cover, being sure to stir occasionally until all veggies are tender. Add a little water if the soup begins to get too thick. If you use fresh onions, carrots and potatoes, the cooking time will be longer. This recipe serves 5 to 6.
