You'll need:
Mix the first five ingredients together in a medium mixing bowl. Spray a large frying pan with non-stick spray. Turn on the burner to low. Drop an overfilled tablespoon of potato mixture onto into the pan, flattening it with the spoon to about 1/2 inch thickness. Put several more in the pan as well, depending upon the size of the pan. When the pancakes are brown on one side (2 to 3 minutes), flip them over. Brown on the other side, being careful not to scorch the pancakes. Do be sure all the raw egg is cooked through. Serve with a dollop of butter, margarine or gravy.
