You'll need:
Cut a lid-size hole in the top of the pumpkin, and remove the seeds. Separate the seeds from the pulp. Discarding the pulp, rinse the seeds in a sieve or colander. Place the seeds in a pot filled with enough water to cover them by an inch. Simmer for about 15 minutes. Spread the seeds in a single layer on a foil-covered cookie sheet for easy clean-up. Bake at 350˚ F for 15 minutes or until golden and slightly crisp. BE CAREFUL NOT TO BURN the seeds. Sprinkle with salt to taste. Parmesan cheese or other spices may also be added. Don't forget to carve the pumpkin! |
