This soup is very good for you.  You can make the cleaning and chopping much easier if you use frozen vegetables.  The tradeoff is the cost goes up and the nutrients decrease a bit.

Nancy's Vegetable Soup Recipe

 

Combine the following in a large pot or slow cooker:

  • 1 can tomatoes (you can use fresh if your garden is producing)
  • 1 large onion, chopped
  • 1 to 3 cloves of garlic, chopped (powdered garlic works too)
  • 1 tablespoon (or so) Worcestershire sauce - to taste
  • Black pepper to taste
  • Chopped veggies - you choose.  Here are some good ones: potatoes, carrots, celery, broccoli, cauliflower, corn, peas.
  • Chopped meat: chicken, ham or leftover beef OR 1 can of Campbell's® Chunky Vegetable Soup if you decide not to use meat and aren't comfortable cooking to taste
  • Water or tomato juice to cover the vegetables.

Follow the directions for your slow cooker or cook on medium low for several hours until the soup tastes good. 

Adjust the seasonings to taste.
